Egg Mayo Sandwich Filler

A slight twist on the classic.

Ingredients

Method

Melt 50g of butter into a large saucepan.

Crack 15 eggs into a bowl, trying to keep all yolks whole.

Add eggs to saucepan, again trying to keep yolks whole. Raise to medium heat.

Add 1tbsp all purpose seasoning, 1tsp black pepper and 1tsp white pepper.

Cook until whites are almost fully solid. Do not let fully cook through. Once silidifying, rapidly mix after turning heat off. Let the residual heat finish cooking the eggs.

Add 200ml mayonnaise and mix well.
